Grilled Chicken Kabob
Ingredients
- 2 chicken breasts, boneless/skinless cut into 1-inch cubes
- 1 Yellow Bell Pepper cored and cut into 6-8 pieces
- 6-9 cherry tomatoes
- 1 white onion cut into wedges
- 1 oz Los Chileros Pueblo Chicken Rub
Instructions
- Put all ingredients in large plastic resealable bag.
- Combine package with 1/2 cup olive oil and 1/4 cup white wine or water. Stir well to dissolve mixture.
- Pour marinade into bag with chicken and vegetables, being sure to coat all the ingredients. Chill in refrigerator for 30 minutes while kabob skewers are submerged in water.
- Preheat gas grill or charcoal to medium heat (375°).
- Remove bag from refrigerator and alternatively put chicken, pepper, tomato, onion on each skewer.
- Grill until internal temperature reaches 165°.
